Fish Moqueca – a.k.a Fish Stew


This delicious dish comes from Southern American culinary with African influence.  It is a quick meal to prepare and it is sure to please everyone in your house.

The combination of the fresh vegetables, herbs and the fish brings a delicate taste with a hint of sweetness from the coconut milk.

Have a go, it won’t take long and I am sure you’ll love it 😃

 

The recipe:

Around 700g of fish fillets (choose a white fish like cod or a fish with a mild taste

1 lemon
1 large white onion cut in rings
1 red pepper cut in rings
1 yellow pepper cut in rings
200g of frozen peas
1 tin of chopped tomatoes (you can use 2 fresh ripe tomatoes cut in rings if you prefer)
3 tbsp of chopped parsley or coriander
200ml of coconut milk (if you want to cut down calories, try to use the light version)
2 cubes of fish stock
A handful of cashew nuts

Put the fish with the lemon juice in a container and let it rest for around 1 hour

Place the fish and the vegetables in a wide shallow pan, dissolve the the fish stock and add to the coconut milk.

Once stirred well add the fish. Leave your moqueca cooking with a lid partially covering the pan cooking on a low heat for around 15.IMG_7768

Stir evenly but being careful not to break the fish. Just before removing from the hob, add the cashew nuts and cook for a further 5 minutes.

Finish off adding the fresh parsley (or coriander) and your moqueca is ready.
