This appetising dish has only 159 cals and due to the fibres from the spinach and the addition of cheese, will make you feel fuller for longer.
This vegetarian meal is a light and delicious option for a fasting day which was extracted and slightly modified from “The fast diet recipe book”. Just briefly explaining, the 5:2 Diet, also know as the Fast Diet, has the principle of fasting twice a week, limiting the calorie intake to 500 cals for women and 600 cals for men.
I have cooked them for dinner but in the book, Mimi Spencer suggests that this recipe also works as a breakfast.
100g baby Spinach
1 tsp chilli
1 clove garlic
2 or 3 large mushrooms
50g of low fat mozzarella, torn
2 tsp of pecorino grate or shaved (it can be swapped by Parmigiano cheese)
Oregano or fresh basil leaves
Salt & Pepper
Salad leaves to serve with it
How to cook:
Preheat the grill to 200ºC/400ºF
In a bowl mix the spinach, the chilli, garlic and fill the mushrooms with the mix. Firstly tear the mozzarella and place on top. Shave the parmigiano and finish off with oregano or basil, season and grill.
Grill for 10-15 minutes or until the cheese has melted and the mushroom is cooked but firm.
Serve with some leaves on the side and voila!
