This guilt free pancake could not be any easier or quicker. It can be eaten for breakfast, as a post workout meal, as a treat or even as lunch or dinner!
I loooooove them and apart from being so easy to make, they are delicious, healthy and filling 😃
The best thing is they contain no flour or artificial sugars keeping them light in consistency and naturally sweetened. Then, once you have finished preparing them, you can use your creativity to make this lovely treat even more yummy!!!
Don’t be afraid of choosing right or wrong combinations because there isn’t any rules you should follow! At the end of the day, the kitchen is a place to show your creativity and passion.
For the basic mix you will need:
Blend it well until they are nicely mixed or if you want to be able to taste tiny pieces of banana, you can mash the banana and then add the eggs. Using a non-stick frying pan or if you haven’t got a one of those you will need to add a bit of oil to your pan. If you need to add oil try to use the healthier option.
It should be straight forward and you probably have done pancakes before, but if you haven’t… Then I can give you the basic instructions for you to prepare the most yummy pancakes for you and your family 😉
Start heating up your frying pan, once it is quite hot, add the pancake mix. I always make them on a medium heat to avoid burning the bottom without cooking properly and ifficult to turn the pancake on the other side. Once you have both sides golden it will be ready.
So what can I use as toppings?
Well, like I said.. You can use your creativity and mix fruit and nuts for example.. Below there is a list of toppings that you can try combining them as you wish :). Enjoy!!!
-Fresh berries (strawberries, blueberries, raspberries)
-Nutty butter (peanut, almond, cashew butter)
-Nuts such as almond flakes, cashew, pecan, walnut, pistachios (you can process them quickly so they will be in tiny crunchy bits)
-A drizzle of honey, agave, maple syrup, fructose syrup
-fat free yoghurt
